Japanese Sencha Tea

SenchaBasically, all Japanese green tea is the same.

The only differences between them would be the grade or quality of the tea and what additives are put in them.  Sencha is naturally sweet and has a clean taste.

Sencha is created by the picking of smaller leaves which deliver a more refined taste.

Sencha, gyokuro, and matcha all go through the same intial steaming process which slows down the oxidation in the tea leaves. Following the steaming process is the drying stage where the tea leaves are dried, rolled, and twisted into shape.

Sencha must be steeped at a lower temperature than the other green teas because it retains its natural bitterness of raw leaf due to its unoxidized state.

Temperature for brewing sencha should be around 160-165 F to avoid the brew from being overly bitter.

Sencha is green in color unlike Chinese green tea which appears to have a yellowish color. Sencha can enjoyed over a nice seafood dinner or even with desert.
